Nicolas always knew that his passion lay with winemaking and that he would be the 5th generation in his family to run this estate. He studied at the “Lycee Viticole de Beaune” between 1989-1994 and interned locally with Domaine Jospeh Voillot as well as Domaine du Vieux Telegraphe in Chateauneuf-du-Pape before returning to his family estate Rossignol Jeanniard. Wanting to better understand different methods of vinification, he set off to study under Domaine Boschendal in South Africa and Chateau La Cardonne in Bordeaux in 1995. Two years later, while continuing to make wine for the family estate, Nicolas launched his own domaine starting with three hectares. In 2005, Nicolas decided to create a negociant label to unify the two domaines. Today, everything is made under and labeled as “Domaine Nicolas Rossignol”.
Lay of the Land
For centuries the wines from Volnay and Pommard have shared popularity within the wine world. These “sibling” communes sit side by side just south of Beaune and can produce strikingly different styles of wine. Whereas Pommard can be described as chewy, extracted and austere, Volnay is stereotyped as lacy and ethereal. Though, in reality, their true style is drawn from their specific terroir and vinification methods. Depending on the producer and opposed to common belief, Volnay and Pommard might appear reversed in style. However, if the wine hails from the south side of Pommard, it is very much like the north side of Volnay. Though they have a great number of Premier Cru for their total hectares, more than half the vineyards in Volnay are classified Premier Cru, a remarkable number. Despite some epic 1er crus, there are no Grand Crus in either commune.
