Jean Marc and Hugues Pavelot
The Pavelots have been cultivating vines in Savigny-lès-Beaune just before the French revolution and have made some of the best wines in the village since. The domaine’s flagship, La Dominode, is powerfully structured wine from the south hill of Savigny. This wine aside, the Pavelots make traditionally pure and classic Burgundy. Their large range of vineyards have produced lacy, delicate and well priced Burgundy one usually associates with Savigny, like Serpentières and Peuillets, as well as hugely structured, gravelly, and age-worthy monuments like Gravains, Guettes and Dominode. If you have interest in wines that taste of history and tradition, this is a must taste estate for you.
Lay of the Land
Savigny-lès-Beaune is a northern commune in Burgundy’s Côte de Beaune. It is planted to Chardonnay and Pinot Blanc for white and Pinot Noir for red, however red wine makes up 85% of the production. The village doesn’t have Grand Crus, though there are 22 classified Premier Crus. The commune is enclosed by the hills of Corton and Côte de Beaune on either side creating sites with many different exposures. The gradient is gentle at first but more steep as one goes higher, especially on the south-facing slope. Lower on the slopes consist of alluvia from the Rhoin, a river that runs east-west through the valley. Higher on the slopes, the geology is similar to the famous hill of Corton. At the Pernand-Vergelesses end, exposure is southerly and the soils are gravelly with a scattering of oolitic limestones. Lower down, the red-brown limestone becomes more clayey and pebbly. Opposite, the slope faces East and the limestone soils include some sand. Pretty geeky stuff but we find this stuff fascinating!
