Inside the bottle: The Fourchaume is the most muscular wine in the range of Sebastien’s premier cru Chablis. Deeply texture in the nose and the palate, the wine shows grit and dense, mineralic impressions. This is one of those wines that any wine person would realize that they are have having a wine from a distinguished vineyard. The palate is full and rich, almost like you can feel sweet fine-grained limestone powder in your mouth. Like the other premier crus from Sebastien, this wine spends the majority of its elevage in stainless steel with a small portion, less than 10%, in older oak barrels.
Terroir: This is the third of the great three premier crus on the right bank of the Serein river. Located just north of the Grand Cru vineyards, Fourchaume nearly picks up where they left off. Situated on a perfect southwest face, this vineyard has more advantages to achieve full ripeness in colder years. Indeed, Kimmeridgian stone is the “roche mare” of this vineyard but it is easy to find portlandian limestones, marl and plenty of clay in this site. It is the only premier cru in its entirety that shares the same direct aspect as the great Grand Cru Le Clos. It is a very special site.
