VINEYARD DETAILS

Le Bois des Ormes comes from a single vineyard in the Ruest lieu-dit planted in 1963 with an old massale selection of 100% Pinot Noir on a cool north-facing exposure at 240m on Oligocene limestone bedrock with deep, iron-rich, low-fertility limestone-marl topsoil.

CELLAR NOTES

Naturally fermented with 100% whole bunches in stainless steel for one full lunar cycle, around 29.5 days, with two foot pigeages during maceration before pressing in a vertical basket press. Aged up to 24 months in 5+ year-old 228L barrels with full malolactic fermentation and neither fined nor filtered. First sulfite addition at reception of the grapes.
